Paleo Recipe: Artichokes with Salsa Verde

This is the one recipe from Paleo Everday Around the World: Italian Cuisine that I absolutely fell in love with! It’s super easy to make, but each bite packs a ton of flavor.

  • ½ cup Italian parsley
  • 1 tablespoon capers, drained and rinsed
  • 2 ½ tablespoons minced shallots
  • 1 garlic clove
  • 1 anchovy filet (or a dash of anchovy paste)
  • 1/8 teaspoon red pepper flakes
  • ¼ cup extra virgin olive oil
  • 1 tablespoon white wine vinegar
  • 2 tablespoons coconut milk
  • Sea salt
  • Lemon wedges for serving
  • 4 Artichokes

Trim the top and bottom off of each artichoke. Steam them for 30 to 40 minutes until the leaves pull off with little effort. Combine all of the other ingredients in a food processor or blender and blend until completely smooth. Season with sea salt, and serve it as a dip for the steamed artichokes, along with the lemons.
