Paleo Orange Chicken Done Right

This Paleo orange chicken recipe is gonna broke da mouth! That’s right y’all, I’m back with another cooking video to show you how you can turn your favorite dish—in this case an orange chicken recipe—into something that meets your dietary needs.

If you’re Paleo, gluten free, or just like cooking healthy, you’ll love how I use tapioca flour to batter the chicken before frying it. And if you’re like me, and you just want something to taste good, you’ll appreciate how the tapioca flour makes the chicken extra crispy.

I use chicken breasts in this video, but you can use chicken thighs just as long as you cut out any fat first. Make sure to save some orange zest and slice up some green onions. You can top the chicken with both for a nice presentation and loads of extra flavor.

Here’s the recipe:

Paleo Orange Chicken

Ingredients

Chicken:

  • 2 lbs boneless skinless chicken breasts, cut into bite-size pieces

  • 1 tbsp salt1 tsp white pepper

  • 1.5 garlic powder

  • 3 eggs scrambled

  • 1 cup tapioca flour

  • Coconut oil for frying

Orange Chicken Sauce:

  • 1 cup 100% orange juice frozen concentrate (don’t add water)

  • 2 tbsp honey

  • 2 tbsp soy sauce or coconut aminos or Bragg’s aminos

  • 1/4 teaspoon minced ginger

  • 1 tbsp minced garlic

  • 1/2 teaspoon red chili flakes (optional)

  • Orange zest from 1 orange (optional)

Instructions

To make chicken:

1. Cut chicken breast into small, bite-size pieces. Season chicken with garlic powder, salt and pepper.

2. Place tapioca flour in a shallow dish or pie plate.

3. Scramble eggs and mix in with chicken.

4. Heat 2 to 3 inches of coconut oil in a deep skillet over medium-high heat. Using a thermometer, watch for it to reach 350 degrees. If you don’t have a thermometer, no worries put a little of the flour in the skillet and if it sizzles then it’s hot enough.

5. Coat chicken in flour and place chicken in hot coconut oil.

6. Cooking in batches, cook several chicken pieces at a time. Cook for 2 to 3 minutes, turning once. The chicken should be golden brown. Place chicken on a paper-towel-lined plate, or rack to drain excess oil. Repeat.

To make sauce:

1. Add together orange juice, honey, soy sauce, ginger, garlic, and optional red chili flakes.

2. In separate skillet, add orange sauce to skillet on medium high. Cook until sauce begins to boil.

3. As orange sauce starts to caramelize (thicken), add fried chicken. Continue to mix. Completely coating chicken with orange sauce.

4. Once completely coated remove from heat and serve.

5. Add green onion and orange zest as a garnish.
