Chicken Pho Recipe
This chicken pho recipe is an easy way to get dinner on the table in about 30 minutes. The refreshing herbal flavors and luscious broth make chicken pho a winner with everyone in your family, whether you’re watching macros so you can hit those fitness goals or you’re trying to feed your kids something healthy.
Ingredients you'll need:
10-ounce package rice noodles (vermicelli or rice stick)
8 cups chicken broth
1 pound chicken breast
1/4 cup fish sauce
4 pods star anise
1 tbsp whole peppercorn
1 tbsp coriander seed
1 1/2 tbsp minced garlic
One, 2-inch piece of peeled fresh ginger
1 bunch of green onions
2 limes cut in quarters
1 sliced jalapeño
1/4 cup bean sprouts
1 bunch fresh Thai basil
1 bunch fresh cilantro
1/4 white onion thinly sliced
Step 1
Make the rice noodles. It's important to know the noodles cook very fast so don’t let them fully cook. They should be al dente. First, bring water to a boil. Drop rice noodle in boiling water. Separate noodles and then quickly remove (about 1-2 minutes). Immediately add to cold/iced water to immediately stop the cooking process. Set aside for later.
Step 2
Heat up the pot on medium-high heat. Then add star anise, whole peppercorn, coriander seed, and green onions to the hot pot. Stir constantly to bring out flavors, about 30 seconds - 1 minute. Then add chicken broth, fresh ginger, garlic. Bring to a boil.
Step 3
Add chicken to the broth. Cook for about 6 - 10 mins until tender. It will slightly break apart with a fork. Remove the chicken from the broth, cut it up, and then set aside. Strain the broth, so the broth is clear.
Step 4
Now for the fun part! It's time to assemble. Add your noodles, chicken, bean sprouts, fresh herbs jalapeños, and sliced onions to the hot broth. Let cool for a minute then enjoy right away!
*To prepare and save for later, simply store your ingredients separately. Put rice noodles in a Ziploc bag and the chicken in a separate bag or container. Keep all your vegetables and fresh herbs prepped so they're ready to go. Pour your broth into a sealable container so all you need to do is heat the broth and assemble.
